Numerous international dental studies have demonstrated xylitol's ability to inhibit infection causing bacteria, such as mutans streptococcus, a well-studied bacterium that concentrates in plaque. Xylitol causes these bacteria to lose the ability to adhere to cells, without which they cannot multiply and cause infection.
